White Chocolate & Strawberry 'Angel Delight' Cupcakes

makes 12 cupcakes

175g unsalted butter
175g caster sugar
3 eggs
1 tsp vanilla extract
175g self-raising flour

for the topping
100g strawberries, plus 6 to decorate
75g white chocolate
150g full-fat cream cheese
110g caster sugar
200ml whipping cream





1.Preheat the oven to 200ºc(fan 180ºc)
2.Cream the butter and caster sugar together until light and fluffy.
3.Beat the eggs together and slowly beat into the mixture then add the vanilla extract.
4.Beat in the flour.
5.Divide the mixture between the 12 cases and bake for 20 minutes or until they have risen and are golden. Leave to cool completely before adding the topping.
for the topping
6.Melt the white chocolate in a bain marie and leave to cool a little; while you... purée the strawberries.Then beat together with the cream cheese and the caster sugar.Finally whisk the cream until it forms soft peak and then fold in the strawberry and white chocolate mixtue.
7.Transfer to a piping bag and pipe the cooled cupcakes. Finish off with half a strawberry.
