American pancakes with crispy bacon

 These American pancakes can be served plain or add some seasonal fruit to the mix in the pan; These ones are with pear.....







 serves 2


130g plain flour
1tsp baking powder
1/2 tsp salt
1tbsp caster sugar
125ml milk
1 egg (beaten)
3 tbsp cottage cheese
25g butter

maple syrup
bacon

Beat the egg into the milk and add the melted butter. Sift the flour into a bowl and mix with the baking powder, salt and caster sugar. Beat the milk mixture into the flour mix; then stir in the cottage cheese.

Fry or oven baked the bacon until crispy.

Heat your pan and grease the bottom with a knob of butter. Using a ladle, pour in enough batter to create 7cm rounds. Cook for about a minute and bubbles start to appear on the surface; flip your pancakes and cook the other side.

Serve with little knobs of butter and maple syrup alongside the bacon.
