1 good Italian Mozzarella ball
5 ripe black or green figs
7 vine ripened tomatoes
5 thin slices of good dry-cured ham
a handful of fresh basil
a glug of good quality olive oil (my fave is Picual)
a squeeze of fresh lemon juice
Maldon sea salt and freshly ground black pepper
Cut up the tomatoes. Tear up the ham, mozzarella and basil leaves. Then cut a cross in the top of the figs and using your thumb and index finger, squeeze open. Dress the salad and enjoy...
