Spicy Kofte Kebabs

Spicy Kofte Kebabs
makes 7

300g minced lamb
1 small onion
2 garlic cloves
1 tsp ground cumin
1 tsp paprika
½ tsp cayenne pepper
A small handful of flat leaf parsley leaves
A small handful of coriander leaves
50g shelled pistachio nuts
Maldon sea salt
Freshly ground black pepper

7 wooden skewers

1. Soak the skewers in water for about 30 minutes; this will stop them burning on the BBQ.
2. Finely chop the onion and gently fry for 5 minutes. 
3. Meanwhile; finely chop the garlic, and using a little salt crush into a paste.
4. Add the garlic and spices to the onion and continue to fry for a further 2 minutes.
5. Remove from the heat and set aside to cool.
6. Chop the leaves and pistachio nuts and combine with the minced lamb in a large bowl. Season well.
7. When the onion mix has cooled sufficiently: add to the lamb.
8. Take small quantities of the mix and use your hand to form a sausage shape around the skewer.
9. Cook on the BBQ until browned on all sides.
