Another wonderful invention from the Swedes. We made this for a picnic with a group of friends... next time we'll take cutlery!

sliced bread, crusts removed
gherkins, sliced thinly
tomatoes, sliced thinly
boiled eggs, sliced
mayonnaise
sliced bread, crusts removed
mustard - I used Moutarde forte de Dijon
English cheddar, sliced
cooked beetroot, thinly sliced
mixed leaves
avocado, sliced & tossed in lime juice

tinned tuna
cucumber, finely sliced
dill / mustard sauce
sliced bread, crusts removed

for the decoration
equal quantities of sour cream* and cream cheese
fresh parsley
cherry tomatoes
radishes
* to make sour cream: simply whisk fresh lemon juice into fresh cream - ~2/3tbsp for every 250ml. Whisk in a tsp at a time until the cream thickens.
1.To get the shape; decide on the size you want and pick an equivalent Tupperware / cake tin / etc.
2. Line your container with baking parchment.
3. Construct your Smörgåstårta in reverse order. Gently pressing down as each layer of bread is added.
4. Turn out you sandwich-cake onto a serving dish or (in our case) the lid of a larger Tupperware.
5. Trim edges and "ice" with the sour cream/ cream cheese mix. Then decorate at will!
