That's my Jam

60ml lime juice
750g of fruit - I used strawberry, banana and pear
500g granulated sugar
120ml water


1.Place the lime juice into a bowl,
2.Dice the fruit and mix with the lime juice, this will stop it from oxidising.
3.Dissolve the sugar in the water as you bring it to the boil in a medium saucepan.
4.Cover tightly for the first 2 minutes (the steam washes any sugar crystals off the sides). Then uncover and add the fruit.
5.Keep at a gentle rolling boil for 30 minutes, stirring to prevent sticking, until the spoon leaves a track.
6.Pour the mixture into hot sterilised jars, screw on the lids and leave them to cool.

7.If your jam has strawberry in it, try a little freshly ground black pepper.
