Tiramisu Cupcakes

Makes 12 cupcakes

for the base
50g unsalted butter
125g caster sugar
4 eggs
125g plain flour
1 tbsp instant espresso coffee powder dissolved in 2 tbsp of boiling water

for the frosting
250g mascarpone cheese
125g icing sugar
1 tbsp Marsala wine
cocoa powder and icing sugar to decorate
chocolate covered coffee beans to decorate

Preheat the oven to 200ºC (fan 180ºC)

Put the butter in a heatproof bowl and melt in the microwave or over a pan of gently simmering water.

Put the caster sugar and eggs in another bowl, and using an electric whisk, cream them together until they double in volume.

Sift the flour and fold in half into the creamed mixture. Mix the coffee and butter together and add half to the mixture; then, add the rest of the flour followed by the remainder of the butter mixture. Gently fold these in.

Divide the mixture between your paper cases and bake for 25 minutes, or until a skewer inserted in the middle comes out clean. Allow to cool for 5 minutes before removing from the cupcake tin.

To make the frosting you whisk the mascarpone and icing sugar together before mixing in the Marsala wine. Use a piping bag to add to frosting; then finish with a dusting of cocoa powder and icing sugar and finally add the chocolate covered coffee beans.....
