Robin's lovely Tag'

My mate Robin is a great cook and this is one of my favourite things he cooks when I'm over in London.....


serves 3



the Tag
good quality dried Tagliatelle (Italian made if poss.)

7 cloves of garlic
100g finely grated Pecorino cheese
100g finely grated Parmesan
a handful of chopped pine nuts
100g chopped walnuts
25g knob butter
300g Crème Fraîche
75g bousin cheese (garlic and fine herbs)

side salad
a handful of mixed leaves
cherry tomatoes
chilli sauce
olive oil
Balsamic vinegar
Maldon sea salt
freshly ground black pepper

 Firstly, chop the garlic and use the back of a knife and sea salt to turn it into a paste. Then chop the pine nuts and the walnuts. In a bowl; mix together the bousin and Crème Fraîche. Heat the knob of butter to the pan and gently fry the garlic paste as you stir it. Add the walnuts and half of Pecorino and Parmesan, stir so you get a good covering of sticky cheese on the walnuts.  Take off the heat and season with freshly ground black pepper.

 Put a large pan of well-salted water on to boil. For the cherry tomatoes; heat some olive oil with the chilli sauce and Balsamic vinegar in a wok (preferably). Cut the tomatoes in half and gently fry until soft. Cook the tagliatelle as per the instructions on the box ;-)
 Put the pan with the walnuts over a low heat alternately stir in the rest of the cheese and the Crème Fraîche mix.
 Plate up and finish with a sprinkle of chopped pine nuts.
