Proper Lemonade / Limon-nada


makes ~2 litres
8 lemons
150g white sugar
1.4l water

1. Peel 4 of the lemons; being careful to remove all of the white pith which would make it bitter.
2. Squeeze all 8 lemons and pour into a bowl with the zest.
3. Add the sugar.
4. Boil the water, and pour it into the bowl. Stir the mixture and leave covered overnight in a cool place.
5. The following morning: check the sweetness, strain the mixture as much or as little as you like (I like pulp in mine); then decant into sterilized bottles and chill thoroughly.
6. Serve with plenty of ice, a wedge of fresh lemon and a mint leaf.
