I have a fig tree on the balcony...
4 fresh figs
5 Cherry tomatoes; cut in half, length ways
150g Ricotta or Requeson
~75g mixed young salad leaves
good olive oil
fresh lemon juice
Maldon sea salt
Freshly ground pepper
1. Rinse the figs and tomatoes; cross cut the figs and gently press down to open them up a bit.
2. Make a bed of the leaves lay the tomatoes and figs on top.
3. Use a spoon to make loose quinelles: lay them in-between the figs.
4. Season before dressing with the olive oil and lemon juice.
