Torrijas

makes 7





7 thick slices of bread
2 - 3 fresh eggs (lightly beaten)
350ml of fresh milk
zest of 1 lemon
cinnamon stick
vanilla pod
sugar
ground cinnamon



Heat the milk in a small saucepan and remove from the heat just before it reaches boiling point. Add the lemon zest, vanilla pod (scored) and the cinnamon stick and infuse while the milk cools. When cool, heat a little vegetable oil in a frying pan. Then, dip the bread slices into the infused milk (don't let it soak too long or the bread will fall apart) before dipping into the egg. Carefully place the eggy bread into the pan. And fry until golden brown. While the torrid as are still hot liberally sprinkle with sugar and ground cinnamon.
